Ah Zilla, there is a button when you open the menu that says "respawn as nearest way tree" incase you get stuck anywhere. There will be mantling and climbing in the Early Access :)

Every time something new gets added I do the playtrough. I still enjoy the demo and cannot wait for it to be released. But I wish for a way to climb up on stuff. I got stuck and could not jump out. Had to "die", so I could respawn and start over.
