Torque is simply the twisting force of the engine. If you look the torque and power curves for a Honda S2000 (which is a low torque, high HP car) then you'll see the torque curve is relatively flat. It rises until about 3000 RPM and then levels off until Vtec hits at 6000. Well this torque curve would actually directly correlate to acceleration on a flat road within a gear. Think about the one most important equation in physics: F=ma. Well if we look at the torque as the force and mass stays constant, then the torque of the engine and the acceleration of the car will go up and down together. So when that Vtec hits, you will start to accelerate harder but since it's the torque curve is fairly flat, the acceleration will be pretty constant (you'll be pushed back into your seat the same amount until you lift).
