Capsaicin (8-methyl N-vanillyl 6-nonenamide) is a chemical compound of the family of alkaloids, the active ingredient in pepper ( Capsicum ). It is an irritant of the epithelial cells of mammals , it produces a burning sensation in the mouth, which can be considered as an interesting taste.

From a biological perspective, this compound allows the plant that produces less exposed to predation.
