sweet potato soup
Ingredients:
- 2 large sweet potatoes, peeled and diced (so you need more of me)
- 1 medium onion, chopped
- 2 cloves garlic, minced (or better 5, you can never have enough of them)
- 3 cups vegetable broth
- 1 cup coconut milk (or any milk of your choice, but please none by humans)
- 2 tablespoons olive oil
- 1 teaspoon ground cumin (hehe)
- 1/2 teaspoon ground ginger (not the one with the red hairs)
- 1/4 teaspoon ground cinnamon (or better not)
- Salt and pepper to taste
Optional toppings: chopped fresh cilantro, toasted pumpkin seeds, a drizzle of coconut milk

Instructions
Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until they're ♥♥♥♥♥♥♥ golden and fragrant.
If your eyes went red, it might be the pot or the onions, that's normal.

Toss in the diced sweet potatoes and give 'em a good stir. Cook for a few minutes until they start to soften a bit.

Sprinkle in the ground cumin and cinnamon, and season with some salt and pepper.
Mix that ♥♥♥♥ around until the sweet potatoes are coated in the spices.

Pour in the vegetable or chicken broth and bring the mixture to a boil.
Then, lower the heat, cover the pot, and let it simmer for about 15-20 minutes, or until the sweet potatoes are fork-tender.

Once those sweet taters are soft as a baby's ass, grab a ♥♥♥♥♥♥♥ immersion blender and puree the soup until it's smooth and creamy.
If you don't have an immersion blender, you can use a regular blender, but be careful not to burn yourself more then you do by just existing.

Stir in the coconut milk and let the soup simmer for another 5 minutes, just to get all those flavors mingling together in a hot tub of deliciousness.

Taste that ♥♥♥♥ and adjust the seasonings as needed. If it needs more salt, pepper, or a dash of hot sauce to spice things up, go ahead and try to work your magic.

Serve that glorious sweet potato soup in bowls, and if you're feeling fancy, sprinkle some chopped fresh cilantro or parsley on top for a burst of color and flavor.
