Sweet Potato Chili – In a large pot, sauté 1 diced onion, 2 minced garlic cloves, and 1 diced bell pepper in 2 tablespoons of oil until softened. Add 1 diced sweet potato, 1 can (15 oz) black beans, 1 can (15 oz) kidney beans, 1 can (15 oz) diced tomatoes, 2 cups vegetable broth, and 1 tablespoon chili powder. Simmer for 25-30 minutes until the sweet potatoes are tender. Serve with sour cream and cilantro.
