Ingredients
For the Cake:
2 cups (240g) all-purpose flour
2 cups (400g) granulated sugar
3/4 cup (75g) unsweetened cocoa powder
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 tsp espresso powder (optional, enhances chocolate flavor)
1 cup (240ml) milk (or buttermilk for a richer flavor)
1/2 cup (120ml) vegetable oil
2 large eggs
2 tsp pure vanilla extract
1 cup (240ml) boiling water
For the Frosting:
1 cup (230g) unsalted butter, softened
3 1/2 cups (440g) powdered sugar
1/2 cup (45g) unsweetened cocoa powder
1/2 cup (120ml) heavy cream (add more as needed for consistency)
2 tsp pure vanilla extract
Pinch of salt
Instructions
For the Cake:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
Mix dry ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder.
Add wet ingredients: Add the milk, oil, eggs, and vanilla. Beat on medium speed until smooth.
Incorporate boiling water: Reduce the speed to low and carefully add the boiling water. The batter will be thin, but that's normal.
Bake: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
For the Frosting:
Beat butter: In a large bowl, beat the softened butter on medium speed until creamy.
Add dry ingredients: Sift in the powdered sugar and cocoa powder. Mix on low speed until combined.
Add cream and vanilla: Pour in the heavy cream and vanilla extract, then beat on high speed until the frosting is fluffy and smooth. Adjust the consistency with more cream if needed.
Assemble and frost: Place one cake layer on a serving plate, spread a layer of frosting, then top with the second cake. Frost the top and sides of the cake.
