-250g of desalted cod (you can leave it in a container with water the day before, that’ll remove the salt)
-100g of oil
-50g of milk
-1 clove garlic
-Pepper

Put the cod in a pot filled with water (make sure cod is completely submerged), and leave it in the fire until it boils. Drain the pot, remove skin and bones. Cut it up into small pieces.

Now put the oil with the bits of garlic inside a cup in the microwave. Heat it up for a few seconds, it doesn’t need to be hot. Then put it into the blender. Start by putting a bit of cod, a bit of milk, then whip. Add some more cod, some more milk, then whip again. Repeat process until it is well mixed. It must not be liquid, but a thick cream! Add pepper, and decorate with parsley if you wish.
