COLA DE MONO
Ingredientes (aprox. 1 litro): 1 litro de leche, 200 ml de aguardiente (puede ser pisco o ron), 3/4 taza de azúcar, 2 palos de canela, 3–4 clavos de olor, 1 cucharadita de café instantáneo, 1 cucharadita de esencia de vainilla (opcional), Cáscara de naranja o limón (opcional)
Preparación: Calentar la leche. Pon la leche en una olla con la canela, clavos y cáscara de naranja. Calienta a fuego medio (sin que hierva fuerte). Agregar el azúcar. Incorpora el azúcar y revuelve hasta que se disuelva completamente. Sumar el café. Disuelve el café en un poco de leche caliente y agrégalo a la mezcla. Dejar infusionar. Cocina unos minutos para que se mezclen bien los sabores. Luego retira del fuego y deja enfriar completamente. Agregar el alcohol. Una vez frío, añade el aguardiente (muy importante que esté frío para que no se evapore el alcohol). Colar y embotellar. Cuela la mezcla para retirar especias. Guarda en una botella y refrigera.
