What I liked:
Well for starters, skyrim is beautiful to begin with, but adding that 3d depth, combined with the tactile sensation of turning your head to look around generates some pretty intense 'wow' feels. The first time I looked up at the night sky, I just stared and stared.
Ranged combat is basically the way to go. More on this in dislikes.
Stealth. I really like stealth in VR. I had a very organic experience in Bleak Falls Barrow, right at the beginning of my playthrough in VR. I snuck up on the initial group of bandits inside, tucked myself behind a coffin/sarcophagus peeked over, hid again, then raised my bow over the cover, pointed, and blind fired my bow over the cover.

Dislikes:
You can tell this game wasn't intended for VR originally. There are plenty of places that have 'main roads' that in VR, you suddenly realize exactly how steep the landscape is, and how impossible it would be for a horse to pull a wagon up it. I found myself staring almost vertically at some points just walking up a cobblestone path. These steep grades make combat fairly difficult.
Ranged combat is great. However, melee combat is pretty garbage. It took me about three swings to realize that each weapon type(sword, axe, mace), still has it's cooldown for it's swing. In practice, this results in taking three swings, but only the first and third attack hitting, because your chosen melee weapon is on cooldown.
Ranged combat does not have this same restriction. If you can load the bow and pull the string back really fast, you can also shoot really fast. Magic timing is only limited to casting animation and magicka, so it's not a terrible option.
Even though it is in VR, there is not really an efficient way to move items still by default. It's the exact same system as on the non-VR versions. Aim at an item, hold the activate button, and manipulate it in world, with it being subjected to gravity and self-righting. Further disconnect happens because you're actively 'holding' this item with your hand, but it's floating three inches in front of your fingers.
Summary:
I love it. Every minute I spend inside Skyrim is magical in and of itself. You get a real sense for the scale of things in-game. Even though my dislikes section is longer, I can't really put into words how breathtaking it is to physically look around in the world of Skyrim.
