Crust:
200 g digestive biscuits (or graham crackers)
100 g unsalted butter, melted
50 g granulated sugar
Filling:
600 g cream cheese, softened
150 g granulated sugar
3 large eggs
1 tsp vanilla extract
200 ml sour cream
1 tbsp lemon juice
Instructions
Preheat oven to 180°C. Crush the biscuits into fine crumbs. Combine with melted butter and sugar until mixed. Press into the bottom of a 23 cm springform pan and bake for 10 min. Cool.
Beat cream cheese until smooth. Gradually add sugar and mix well. Add eggs one at a time. Stir in vanilla, sour cream, and lemon juice until smooth.
Bake:
Pour filling into cooled crust. Bake for 50-60 min or until slightly wobbly in the center. Turn off oven and crack the door for 1 hour.
Chill and Serve:
Refrigerate for at least 4 hours or overnight. Top with fruit or chocolate before serving. Enjoy!
