Lamb shoulder 600g (boneless). Ghee or butter 2-3 tablespoons. Onions 2 medium, finely chopped
Garlic 2-3 cloves, minced. Ginger 1 tablespoon, grated. kashmiri red chili powder 2 tablespoons Garam masala 1 teaspoon. Tomato puree 1 cup. Yogurt. 1/2 cup

Prepare the Lamb: Cut lamb into chunks and marinate with yogurt, ginger, garlic, and salt for at least 30 minutes.
Cook Onions: Heat ghee in a pot. Add chopped onions and sauté until golden brown.
Add Spices: Stir in Kashmiri chili powder and garam masala. Cook for a minute until fragrant.
Combine Ingredients: Add marinated lamb and tomato puree. Stir well to coat the meat.
Simmer: Pour in water to cover the lamb. Bring to a boil, then reduce heat and simmer for 1-2 hours until the lamb is tender.
Finish: Stir in yogurt before serving. Garnish with fresh coriander. What follows is the most 6/10 Rogan Josh you will ever eat
