Ingredients
Dry: 1 ½ cups + 3 tablespoons all-purpose flour, 1 cup white sugar, 1 tsp baking soda, and ½ tsp salt.
Wet: 5 tbsp vegetable or canola oil, 1 ½ tsp pure vanilla extract, 1 tsp white vinegar, and 1 cup water.
Instructions
Prepare Oven: Preheat your oven to 350°F (175°C).
Mix Batter: You can mix this directly in a greased 8" square baking pan or use a separate bowl. Combine the dry ingredients first. Create three depressions in the mixture: one large and two small. Pour the vinegar into one small hole, vanilla into the other, and oil into the larger one. Pour water over everything and mix until smooth.
Bake: Place on the middle rack and bake for 35 minutes. Test for doneness by inserting a toothpick; it should come out clean.
Cool & Finish: Allow the cake to cool completely before adding frosting or toppings.
