Empadão de vitela com puré de batata-doce

1. Pré-aqueça o forno a 180 ºC.
2. Refogue a cebola e o alho picados num tacho com o azeite. Deixe cozinhar por 2 minutos em lume brando.
3. Adicione a carne, envolva e deixe cozinhar por 5 minutos, mexendo de vez em quando.
4. Acrescente a cenoura cortada em cubos e cozinhe por mais 2 minutos.
5. Junte a polpa de tomate e tempere com tomilho e sal. Misture e deixe cozinhar por 12 minutos em lume brando.
6. Enquanto isso, descasque a batata-doce e corte-a em cubos. Cozinhe em água cerca de 20 minutos.
7. Junte as ervilhas ao tacho com a carne, e deite a mistura num tabuleiro de forno fundo.
8. Escorra a batata e coloque numa taça, juntamente com o leite e a noz-moscada, esmague com a ajuda de um garfo. Disponha o puré sobre a mistura de carne e ervilhas e polvilhe com o queijo ralado. Leve ao forno durante 20 minutos.
