Ingredients
2 cups basmati rice
500g chicken (bone-in)
1 cup yogurt
2 onions, sliced
2 tomatoes, chopped
1 tbsp ginger-garlic paste
1/2 tsp turmeric
1 tsp red chili powder
1 tsp garam masala
Whole spices (4 cloves, 2 cardamom, 1 bay leaf, 1 small cinnamon stick)
Chopped coriander & mint
Saffron in 2 tbsp warm milk (optional)
Salt to taste
4 tbsp oil/ghee
Water as needed
Directions
Soak rice 30 mins. Fry onions till golden; keep half aside. Add spices, paste, then chicken, yogurt, tomatoes, and powdered spices. Cook till oil separates. Parboil rice (70% cooked), then layer over chicken. Top with fried onions, herbs, saffron milk. Seal pot and cook on low (dum) for 20–25 mins. Serve hot with raita or salad.
