Potatoes are Australia’s largest vegetable crop, accounting for well over a third of total vegetable production. The cooler states of South Australia, Victoria and Tasmania account for about three quarters of the total crop. Tasmania’s crop is mainly used for processing.
On average, a person eats over 60kg of potatoes per year. This may be declining as in recent years diets lower in carbohydrates have become popular.
Most of the potatoes grown are used fresh or processed either for the frozen chip market or the potato crisp market. 10% of potatoes are produced for seeding, or producing the rest of the crop.
A potato tuber needs to be grown under the soil as if it is exposed to light, it will become green and poisonous. The crop also needs to be well watered and enjoy plenty of nitrogen and potash.
