Actually Luke, in regards to hissing as a defense mechanism, cats likely hiss as an imitation of snakes, kind of like how some moths have spots on their back that look like eyes. The goal is to make the animal seem like something they're not, and scare potential predators.

To be fair though, I've never seen a cat actually scare off a predator by hissing at it. >.>
