SIMPLE PRESSURE COOKING!!!!
Put a fryer chicken in the pot, a couple onions, a couple carrots and a couple celery stalks. Don't worry about fine chopping. A few bay leafs, some whole peppercorns, garlic. Savory spices like sage, rosemary, thyme, basil can be added as well. Cook on the default soup setting.

After it's done, release the top and then strain the broth into a big pot. Clean the original pot, put some oil back in it and set it for saute. Toss in your more finely chopped carrots, oinions, and celeery and cook til semi-soft. Dump in the broth, and salt to taste :)

Alternatively you can make a pho-style soup by putting cinnamon, cloves, whole garlic, corriander and cardimom into the bottom of the pot and toast until browned. Sub these spices for the western spices. Add your meat, a couple onions, some basil and some fish sauce. Same process as the original chicken soup.
