Path of Achra is a weird sort of minmaxy roguelike where you stack ability triggers together until everything around you just explodes when you look at it. The Rat Banner lets you summon rat-men every turn to assail your opponents - and once the rat-men die they summon slightly weaker rat-men in their place, allowing for expendable swarms to be conjured. Doubly good if you have a power that gives you benefits when an ally dies or is summoned.

jade empire is a game in which there are rat demons, one of them is even talkative: https://jadeempire.fandom.com/wiki/Rat_Demon and reveals secrets, cause rats know all secrets. unfortunately, although there is the viper fighting style or frog transformation, the player cannot learn the rat style or rat transformation. trivia: the voice actor of the rat demon is also a gravedigger npc.

not sure. i played the definitive version on switch and posted my screenshots through twitter to send to my ex. i have vague memories of writing a review for it but i can't be certain.

to be fair square enix initially released dragon quest 11, which was removed when the definitive edition released shortly after. I assume you didn't actually forget but the screenshots/reviews were lost with the store removal of the original game listing

in mordheim rats have campaign and there is dlc rat

there are cave rats and wet rats in xenoblade chronicles 1 that are a collectible inventory item categorized as animals. There are wet rats in xenoblade chronicles 2 HOWEVER they are categorized as insects. This is one of the biggest blunders in gaming history

Also, I have not played Remnant 2 yet, but in Remnant: From the Ashes - Subject 2923 (dlc) there is a new snow world that is a habitat for rats, with rat secrets, rat bosses. Night in the Woods (has rats, also mouse characters)
Open Sewer (has rats you can kill for meat. terrible terrible game tho)
South Park: Stick of Truth (rats swarm and kill kenny, there are also nazi rats you fight at one point)
Vampyr (has rats you can kill for blood. great commentary from ur character who HATES it)
We Went Back (has one rat that you can't pet but you CAN love)

Oh and i think one of final fantasy 9's main characters is a rat

Crash Bandicoot N. Sane Trilogy has rats in both Crash 1 and Crash 2. Crash 1's rats crawl through the dark stages, and as far as I'm aware can be avoided without harming them. Crash 2's rats happen to support spikes, and I believe are indeed required to be killed to finish the game, but off the top of my head I can't think of a surefire example of a rat which is absolutely required to be killed to continue onward.
