This is not a controversial statement though? Everyone thought the prequels were boring and they were all about the jedi. It was the adventures of the dew eyed boy Luke, the space pirate Han and princess Leia that entertained everyone.
Also, the likely reason for surviving lightsaber wounds is they'd cauterize the wound, which would prevent bleeding out.
Also, multiple styles of lightsaber combat is in line with real life swordfighting.

tbh, the star wars setting overall is pretty shallow. the jedi and sith are the most focused upon part of star wars mostly because everything else is just...there, and exists as set dressing for their conflict.
occasionally some other things will be getting some depth, a random planet or alien species, but mostly not.

They absolutely would if they could. But the reason you need so much lightsaber training, is that those mfs have a mind of their own. From the moment you turn on a lightsaber, the weapon itself starts battling the wielder for control.
kotor 2 goes into this quite a bit (as does kotor 1). the crystals in the lightsabers are "alive" in a way through the force. they sometimes "choose" force sensitives on their own and allow themselves to be used in lightsaber construction.
