You can change your profile picture and screen name but not your steam id.
If you've been on game servers where people could record that there might be a way of asking the admins if you've been there, then we might have a pattern of behavior pointing at a favorite world region. With an ip address(possibly also collected) they could get the country or state.
Without supplemental information thats as far as it goes.
If you've purchased something on steam then the client(and Valve and perhaps the game company that gets paid) might have your info but only for the purpose of processing your payment.
From my perspective thats as far as it can possibly go unless Valve answers a court order to turn over your info.
You're very safe from everything outside of steam.

Unless you game out other, more personal information, that they can use to track you down, they are unlikely to know more beyond that.
